VinificationOrganically grown. Hand-picked and transported in small cases. A portion of ‘Blanc de Noirs’ is obtained by pressing. Another portion is blended by bleeding after a 2 days maceration of unstemmed grapes to obtain the colour and an intense fruit flavour. Second fermentation and ageing in bottles (lying lengthwise in piles on racks, with lees). Tilted and shaken before disgorging and final corking. Dosage of ‘Brut’ moderated at 7 g/l.
Tasting NotesDelicate salmon pink color with fine long-lasting mousse, typical Pinot Noir strawberry and raspberry aromas. Creamy and refreshing.
